Method

  1. Fill a coupe with ice and water and set it aside to chill while you build the drink.

Cold glass first. Light looks better through frost.

  2. Measure the mezcal, Aperol, grapefruit juice, lime juice, honey syrup and, if using, the pinch of salt into a shaker tin.

Smoke, bitter orange, two citrus and honey: the cabinet, emptied into one tin.

  3. Fill the tin two-thirds with cubed ice, seal, and shake hard for 10 to 12 seconds until the outside of the tin is frosted.12 sec

Shake until the tin goes white. Grapefruit likes to be woken sharply.

  4. Empty the coupe and double strain the drink through a fine mesh strainer into it so no pulp or ice chips carry over.

Fine strain. The color should sit clear, apricot to gold.

  5. Cut a wide strip of grapefruit peel, express the oils over the surface by squeezing it skin-side down about two inches above the glass, rub the peel around the rim, and drop it in.

One squeeze of peel and the whole glass turns gilded.

Flavor notes

The 2 oz spirit side is split between mezcal (1.5 oz) and Aperol (0.5 oz); the citrus side is 1.5 oz in total (1 oz grapefruit, 0.5 oz lime) because grapefruit is a mild acid and stands in for 0.75 oz of strong citrus; the sweet side is 0.5 oz honey syrup plus the sugar already in the Aperol. Expect grapefruit and bitter orange on the nose, a soft smoke underneath, honey rounding the finish, and a clean lime close. Medium-dry.

Substitutions

  • Aperol: Campari, reduced to 0.25 oz (7.5 ml), with honey syrup raised to 0.75 oz (22 ml) · Darker and more bitter; the color goes from apricot to ruby.
  • Honey syrup: Agave nectar thinned 1:1 with warm water, 0.5 oz (15 ml) · Keeps the drink inside the agave family; the honey florals go quiet.
  • Mezcal: Reposado tequila, 1.5 oz (45 ml) · The smoke leaves and a soft vanilla note from the barrel takes its place.
  • Pink grapefruit juice: Lemon juice, 0.5 oz (15 ml), with lime held at 0.5 oz · Sharper and paler; add a grapefruit peel so the aroma survives.

Without alcohol

Shake 1.5 oz (45 ml) pink grapefruit juice, 0.5 oz (15 ml) lime juice, 0.5 oz (15 ml) honey syrup, 0.5 oz (15 ml) of a zero-proof bitter aperitivo and a pinch of smoked salt with ice; double strain into a chilled coupe and finish with the grapefruit peel. A few drops of cold-brewed lapsang souchong tea supply the whisper of smoke.

Batching

House preparation, honey syrup (3:1): warm 1 cup (340 g) honey with 1/3 cup (80 ml) hot water in a small pan over low heat, stirring until uniform; do not boil. Cool, bottle, refrigerate; keeps 1 month. Batch for 8 drinks: combine 12 oz (360 ml) mezcal, 4 oz (120 ml) Aperol and 4 oz (120 ml) honey syrup; this base keeps refrigerated 2 weeks. On the day, add 8 oz (240 ml) fresh pink grapefruit juice and 4 oz (120 ml) fresh lime juice, stir, and shake each 4 oz (120 ml) portion with ice to order (the full batch is 32 oz / 960 ml for 8 drinks). Use the citrus within 8 hours of squeezing.

Mezcal, pink grapefruit and honey, with the smoke kept polite

Somewhere in a cabinet of citrus, a pink grapefruit sits beside a jar of wildflower honey and a bottle that still remembers the earth oven it came from. Gilded Citrus brings them to the same glass: mezcal for a soft thread of smoke, grapefruit and lime for brightness, a measure of bitter aperitivo for color and edge, honey to gild the finish. It drinks like late afternoon light through a west window, warm at the center and clear at the rim.
