  • Illustration of Coconut Toddy: whitish and slightly cloudy, in a half coconut shell.

    Coconut Toddy

    IconicRegional drink

Sap from the coconut flower that begins to ferment within a few hours into a strong whitish drink resembling diluted milk. It is poured into coconut shells at modest roadside shelters with straw roofs, and some drinkers spice it with pieces of onion and green chile.

Time Out says the tapper climbs the palm in the evening to attach a container under the cut flower and collects the contents early the next morning. Inside Hook says arrack is distilled from toddy, the milky sap of the coconut flower.

Made with: coconut flower sap, onion and green chile (optional).
