Cherry Heering
Also called Heering Cherry Liqueur, Peter Heering, cherry brandy (liqueur)
The Danish cherry liqueur made in Copenhagen since 1818, 24% ABV, from Stevns cherries, sugar and spices aged in cask. Deep, jammy and lightly spiced rather than sweet candy, it is the cherry in the Singapore Sling and the Blood and Sand. Generic 'cherry brandy' is usually this style.
- black cherry
- almond
- clove
- dark sugar
- cherry stone bitterness
- warm spice
Origin
Peter F. Heering, a young Copenhagen merchant trading colonial goods, founded the company in 1818 after receiving an old cherry liqueur recipe from his former employer's wife. The liqueur traveled as ship's cargo to Calcutta, Madras, Shanghai and Jakarta. The brand calls itself the first cherry liqueur and still works to the 1818 recipe: Stevns cherries crushed with their stones, herbs and spices, and at least three years in oak casks.
