The Fabled Pour

Aguardente de cana

Also called Rum da Madeira, rum agrícola da Madeira, Madeira cane spirit

Madeira's sugarcane spirit, distilled from fermented fresh cane juice and bottled around 37.5 to 40% ABV. Grassy and clean when white, it is the backbone of poncha, the island's beaten drink of cane spirit, honey and lemon. Certified bottlings carry the Rum da Madeira geographical indication.

  • fresh cut sugarcane
  • green grass
  • light pepper
  • sweet hay
  • lemon oil lift
  • clean dry finish

Origin

Sugarcane reached Madeira soon after Portuguese settlement in 1419, and sugar was the island's white gold by 1466. Cane spirit survived the centuries when wine took over the land, and 19th century column stills revived it. Since 2011 Rum da Madeira has been a protected geographical indication overseen by IVBAM, with aged versions needing at least three years in oak. Most bottlings are white, and most of those are drunk in poncha.

Common uses
